santamonicaWhat are the rationales behind what is already called the “Food 2.0” Revolution in California?
Silicon Valley entrepreneurs and investment funds now consider food as a major issue: “The big investment frontier is now food, and what’s going on out there is revolutionizing what we eat, how we eat and how it gets to us” (Andrew Zimmern). The rationale at play is linked to the environment and its preservation and health, which knowledge on food-related diseases must be improved.

DigitalFoodLabHow are our food consumption patterns being transformed by Millennials, social networks, blogs, apps, Quantified Self and IoT? 
Today, half of the 80 million American Millenials call themselves “foodies”. Foodies want to eat differently. They seek consistency between the way they consume and their personal values. This has led to the rise of ethical, environmental and health concerns in food practices. California is at the forefront of these transformations which are likely to keep on growing since our hyper-connected societies (Apps, Blogs, Quantified Self) particularly value the “feeling of self” and the body.

microbioteHow is the transormation of the idea of health and well-being impacting our food behaviors?
The recent development of genomics, epigenetics and microbiota research is changing our representations of the idea of health.  The design of new food products and services is transformed. The “energetic” vision of nutrition (“food is fuel“) is imperceptibly replaced by an informational conception of the act of eating (“food is information“).
