Daniele Zappalà conducts his research at the Ecole doctorale de Géographie at the Université Paris IV – Sorbonne. His thesis focuses on The Italian geography of flavors and aromas in the contemporary French imagination.
He is particularly interested in the role of the geographical imagination in the evolution, recomposition and mixing of contemporary European culinary cultures, against a backdrop of tension between local roots and paradoxes of food industrialization.
